Restaurant Radar: Here's Why You Need to Plan a Vacation around Visiting Husk BBQ

If you’re not familiar with the story of Chef Sean Brock and Husk, we’re going to point you to his feature episode on Netflix’s Chef’s Table Season 6 (Spoiler alert: he’s a perfectionist!). But the story of the brand new Husk BBQ in Greenville, South Carolina is not about Sean Brock even though he’ll forever be linked to the restaurant brand he helped build into a global destination. This opening is about what people want right at this moment. And right now, it is NOT fine dining.

Without getting too off track, the pandemic is making us all question what food is worth risking our lives for when dining out. But if there’s one thing I’ve learned in covering food over the years, it’s that no matter what happens, there will always be BBQ. From backyards to trailers, historic houses to gas stations, barbecue is so entrenched into America’s DNA that it’s impossible to think of a time when the appeal of cooking meat - and okay vegetables too I suppose - slowly over an open flame for long periods of time wasn’t a time honored tradition. Moral of the story: when times are tough, you can bet on BBQ.

So what’s unique about a fine dining operation known for refined southern favorites like crispy pig ears in lettuce wraps and wood fired oysters with red pepper butter? Well, it’s still located in the same exact same space, a historic building in Greenville’s West End, but the plating presentation looks a whole lot different. In fact, forget plates, it’s trays that you’ll want to take up your table. Fill them with pulled pork, fried chicken, cornmeal crusted catfish, and sides like smoked cheddar grits if you want to be taken seriously.
