In this hands-on experience, join Pomp & Circumstance’s Chef/Owner, James Ahearn, as we delve into the art of pita making. Move over store-bought pita, because it’s about to get real!

Chef will begin by showcasing and teaching us about the starter and poolish (a pre-ferment commonly used in French baking) that all of his breads begin with, followed by a demo of forming the dough and making the pita.

Each guest will receive a hands on tutorial on creating bread from a starter. Techniques on forming and resting dough will also be covered as we observe the pita baking process first-hand.

Each guest will receive pita recipes, along with your very own take-home starter.

James Ahearn

Chef/Owner, Pomp & Circumstance

Chef James Ahearn is the chef/owner of Pomp & Circumstance Hospitality in Williamsburg, Brooklyn. For his newest restaurant, he was partly inspired by his Armenian-Turkish heritage as looks to introduce what he’s called “macro-Mediterranean” cuisine. He bakes fresh pita from a sourdough starter to order, and baked to perfection in a hearth oven in the front of house.

Located across from the Lorimer stop on the L train in Williamsburg, Brooklyn, Italian & Middle Eastern mash up restaurant, Pomp & Circumstance, known locally as P&C, opened in 2019 by Chef James Ahearn and FOH lead Melissa Morales. Why the name? It is a reference to "great celebration", which they feel every meal out should be.

The vision for P&C came from James’s upbringing, learning to cook from his Armenian grandmother and Sicilian grandfather, and Melissa’s love for the cuisine. They want to educate and connect with their customers, serving natural wine and savory cocktails meant to pair perfectly with P&C’s unique cuisine. 100% from scratch, even fresh pita made to order.
